Interning at Hedonist Artisan Chocolates has a lot of perks, not the least of which is free chocolate. But most interns agree that the best part of the experience is the final project: creating a signature chocolate truffle collection. In August, Hedonist’s first intern collection will be revealed.
Apprentice chocolatier Carolyn Rolleston started her internship at Hedonist Artisan Chocolates in May 2008 simply because she wanted to learn more about chocolate. Her home-school curriculum encouraged the 17-year-old to explore learning opportunities in the greater community. Her initial training under chocolatier Jennifer Posey covered the basics of tasting, packing and wrapping chocolate, but she soon progressed to making ganache (the soft center of a chocolate truffle) and then more advanced chocolate molding and enrobing techniques. Her final project, appropriately titled “The Carolyn Collection,” reflects Carolyn’s personal style, favorite flavors and
artistic flair.

Treat yourself to a free sampling of these truffles on August 14th from 6-8pm at the Hedonist Artisan Chocolates kitchen: 674 South Avenue (in Hedonist Alley), Rochester. Attendees will meet Carolyn and Hedonist’s chocolatier/owner Jennifer Posey, as well as see the South Wedge kitchen where Hedonist chocolates are made.





So, what happened to the guy who made the curry chocolate combo at last year’s Chocolate Ball? That combo was FANTASTIC! I thought that was a Hedonist apprentice too?
That was Nathaniel, he was an intern and is amazing. He goes to Oberlin and has been busy with university. He wants to do a collection though, so look for that in the near future. Another intern, Cody, will be presenting his collection within the next few months.
